Step 1
In a bowl, mix mustard, seasonings, garlic, soy sauce. Rub mix all over the crown roast and allow to marinate in the ref while preparing the stuffing.
Step 2
In a bowl mix meats, onions, raisins, ketchup, hotdogs, liver spread, pickle relish and mustard. Add Vienna sausage and stuff the roast
Step 3
In another bowl mix remaining ingredients to make the rice and top the meat stuffing. Bake covered with foil at 350F for about 1 ½ hours or till the thermometer reads 160F.
Step 4
Save dripping from the pan, add some flour and whisk until smooth. Cook until thick add stock a little at a time and cook until desired consistency and finish with one or two tbsp of butter and plate with some chopped parsley.
