This version of Adobo is surprisingly flavorful! Without the soy sauce in the typical Adobo, there's nothing to distract from the yumminess of garlic and vinegar combined.
Combine all ingredients in a saucepan and cook over high heat until mixture comes to a boil.
Reduce heat to medium and let simmer, covered for 45 minutes or until meat is tender.
Remove cover and cook for another 5 minutes for sauce to reduce and thicken.
